Spoon Bread
1 cup boiling water
1/2 cup self-rising corn meal
2 tablespoons butter or bacon drippings
1/2 cup milk
2 eggs, beaten
Pour boiling water over corn meal and butter. Mix well. Add milk.
Mix then add eggs. Pour into greased one quart baking dish. Bake in
400 degree oven for 20-25 minutes. It will brown. Serve as it comes
from the oven. It will deflate as it cools. Great with turnip greens
and poached eggs.
