Betty Bane

Fall is the time to make my favorite of all cakes.  Apples are ripe and
foods taste better in season.  This recipe is my moms:

Fresh Apple Cake
1 1/2 cups oil
1 1/2 cups sugar
1/2 cup light brown sugar
3 eggs
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2-2 teaspoons cinnamon
4 cups peeled, chopped, diced apples
1 cup chopped nuts and/or 1 cup coconut
Glaze
1 stick butter
1 cup brown sugar
2-3 tablespoons water
Boil 2-3 minutes, pour over warm cake.
Preheat over to 325 degrees.  Grease a 10 inch tube pan or a *11x15
casserole dish.  Mix oil and sugars.  Beat in eggs, one at a time.  Mix
all dry ingredients.  Stir into creamed mixture.  Add other
ingredients.  Put in pan.  Bake 1 hour 15 minutes.  Pour glaze over
cake while hot.  *11x15 cake bakes 45 minutes.  Cake freezes nicely.
