Chicken Casserole
2 cups cubed, cooked chicken breast
1 cup finely chopped celery
1 cup cooked rice
3/4 cup mayonnaise
1 small can sliced mushrooms, drained
1 tablespoon minced onion
1 teaspoon lemon juice
1 teaspoon salt
4 oz. can sliced water chestnuts, drained
1 can cream of chicken soup
2 cups grated cheddar cheese
Mix and put in greased 9x13 dish. Topping: Mix 1/4 cup melted butter
and 1 cup cracker crumbs. The buttery kind is best, also you can use
stuffing mix, corn flakes or chips. All have to be finely crumbled.
