Lemon makes you think of tangy, fresh tasting lemonade or for me today
this simple one bowl dessert.
 
Lemon Chess Pie
All of this is prepared in the blender.
1 medium lemon
4 large eggs
2 cups sugar
1/2 cup melted butter
1 deep dish uncooked pastry shell
Cut off both ends of lemon. Slice, remove seeds. Process ingredients
in blender. Pour into pastry shell. Bake 10 minutes in 400 degree
oven. Reduce heat to 350 degrees, bake 35-40 minutes.
 
If you are preparing Easter lunch, you are thinking of what to serve
with ham, turkey, lamb or pork. This side dish serves 8-10 and goes
well with any meat.
 
Pineapple Casserole
1 1/2 cups shredded cheddar cheese (6 oz.)
3/4 cup sugar
6 tablespoons flour
2 (20 oz.) large cans pineapple chunks, drained, reserve 1/2 cup
1 1/2 stacks buttery crackers, crushed
1/2 cup melted butter
Combine cheese, sugar, flour. Add pineapple and juice. Spoon into
greased 8x12 baking dish. Mix crumbs and butter. Pat over pineapple.
Bake in 350 degree oven for 30 minutes.
 
This is my favorite and easy to make pie.
 
Chocolate Chess Pie
Melt 1/2 stick butter. Cool.
Mix:
1 1/2 cups sugar
3 tablespoons cocoa
2 eggs
1 teaspoon vanilla
1 small can evaporated milk (5 oz.)
Add melted butter. Pour into deep dish pie shell. Bake 325 degree
oven for 45 minutes. Top will be crusty.
