Betty Bane

While attending the closing ceremonies for Meg and Kate last Thursday
night, a reader of the column said she had lost her favorite cake
recipe.  This is in answer to her request.

Pistachio Cake
1 pkg. cake mix
5 eggs
2 pkgs. instant pistachio pudding
1/2 cup milk
1/2 cup water
1/2 cup oil
Mix and bake in a greased and floured tube pan for 45 minutes in a 325
degree oven.

Hint:  You can stand an ear of corn in the hole of an angel food cake
pan.  This makes cutting the kernels easy.  Corn falls into pan.

A friend gave me this hot fruit salad recipe.  Actually, it is perfect
whether eaten cold or room temperature.  Fruit is undrained.

Hot Fruit Salad
1 jar applesauce
1 can apricots
1 can peaches
1 can pears
1 can pineapple tidbits
(Fruit is undrained)
1 can cherry pie filling
1 tsp. cinnamon
1/4 cup brown sugar
Layer in order given in a 9x13 dish.  Bake in 350 oven for 1 hour.

Hint:  If you can't get the paper filters separated when making your
morning coffee - blow on them.  It works for me.

My favorite recent food is...

Cheese Grits Casserole
1 cup grits, instant
1 teaspoon salt
3 cups boiling water
1 stick butter
2 cups sharp grated or shredded cheese
6 eggs
2 cups milk
Stir grits (into boiling water).  Add butter and cheese.  Stir.  Add
eggs and milk.  (I beat my eggs first).  Bake in 325 oven for 1 hour.
