It's the day after the Super Bowl. Who could
be thinking of food? We had a bit of snow Thursday. Not enough to
please the children. Just the right amount for me. It is cold in
Halifax. Tonight they predict it will be 6 degrees. That's a bit
chilly. Which brings to mind my favorite soup. I know no one who does
not like it.
Taco Soup
1 pound (90% lean) ground beef
15 oz. can pinto beans
15 oz. can whole corn
15 oz. can green beans
15 oz. can chili starter
15 oz. can stewed tomatoes
12 oz. can beer
10 oz. can diced tomatoes with green chilies
1 1/2 oz. envelope taco seasoning
1 oz. Ranch dressing mix (1 pkg.)
Brown meat. Drain off fat. Drain the next
three ingredients. Add all other ingredients. Bring to a boil. Simmer
for 30 minutes.
This is the time of year that we enjoy coffee
and tea with a crunchy cookie. Last week I mad Russia tea two times.
It was delicious. Try this dessert with your favorite drink.
Easy Shortbread
2 sticks butter, soft
2 cups flour
1/2 cup sugar
Preheat oven to 325 degrees. With hands mix
all ingredients until well blended. Press into an ungreased 8x8 Pyrex
baking dish. Bake 30-35 minutes. Cut while warm.
Dolly is back at William and Mary after
visiting San Francisco and Bitter Root Valley, Montana with four
lacrosse friends. I have not seen her but look forward to hearing all
the great stories.
Halifax - The town looks great with the new
sidewalks, streetlights and shrubbery. It is so neat and clean. Great

This winter-time fruit casserole is easy and
delicious.
Curried Bake Fruit
1 pound can pear halves, peaches, pineapple
chunks and apricot halves
3/4 cup brown sugar
2 tablespoons curry
1/2 stick butter
Drain fruit. Melt butter in 9x13 dish. Add
sugar and curry. Add fruit. Mix to coat. Bake in 325 oven for 1
hour. Refrigerate overnight. Reheat when ready to serve. Serves 12.
