Chicken is a favorite of a lot of people. Someone gave me
this easy recipe that I think you will enjoy. Why? Because dinner cooks in
one pan in the oven for about 1 and a half hours. Add a salad and you are
ready to eat.
2 chickens - cut up
2 large onions, thinly sliced
8 large potatoes, cut in quarters
Season with salt and pepper
2 tablespoons oregano
1 cup finely chopped Italian parsley
In a large baking pan, put about 1 inch of olive oil or vegetable oil. Add
the chicken which you have rinsed and patted dry. With your hands, separate
onion slices and mix potatoes and other ingredients. Mix thoroughly. Bake in
350 degree oven at least one hour and a half or until potatoes are soft.
