This is a simple cake full of calories, delicious with ice cream or
just cut in squares and eaten with a fork.
Mississippi Mud Cake
1 box devil's food cake mix
1 1/4 C water
1/3 C oil
1/3 C peanut butter
1/2 C chopped peanuts
3 eggs
1 C mini-marshmallows
Heat oven to 350 degrees. Grease and flour a 9x13 pan. In a large bowl
put all ingredients except nuts and marshmallows. Beat 2 minutes. Pour
into pan. Sprinkle nuts over batter. Bake 30 minutes. Remove from oven.
Spread marshmallows to cover cake. Return to oven 1-2 minutes or till
they puff. Cool. Top with your favorite chocolate frosting. This cake
is made from scratch and is a favorite of older people.
It's easy to make and you may top it with ice cream or a
Cream Cheese Frosting
2 eggs
2 C flour
2 tsp. baking soda
2 C sugar
Mix well. Stir In- 20 oz. can crushed pineapple undrained, 1 C coconut,
1 C nuts. Pour into greased 13x9 pan. Bake in 350 oven for 40 minutes.
Topping: 8 oz. cream cheese, 1 stick butter, 1/2 C powder sugar, 2 tsp.
vanilla. Mix and frost cake while warm.
